FOOD

Food is a key component of feeling good and finding that mind/body balance. Feeling connected to what we eat and having an understanding of where our food comes from can be transformative.

Foraging for Greens on Corfu

Harvesting wild greens in Greece is an ancient tradition that connects familial generations for centuries and still remain the main food supply. Being outside in nature, taking from the land not only provides space and freedom but also a sense of a spiritual healing. Appearing with the first autumn rains they are harvested during the basal rosette leaf stage. When you’ve found a good looking crop, cut the leaves being careful not to hurt the root. The commonest way to cook wild greens is to boil them in salted water and serve with a drizzle of olive oil and lemon juice.

Windsurfing at Lefkada

Vassiliki Beach has been rated one of the top 10 best beaches worldwide for windsurfing, and the third best in Europe. During summer, the Ionian Sea is “cooled” by thermal winds (mistral), which together with the morphology of the area, combine to create perfect conditions for windsurfers. The thermal wind increases steadily from midday until late afternoon. In the closed bay of Vassiliki, this phenomenon is impressive; the morning is ideal for beginners (since there are almost no waves). Later, the wind changes and the sea becomes rough, making it better for experienced wind surfers wanting to try new tricks.
