Foraging for Greens on Corfu

Harvesting wild greens in Greece is an ancient tradition that connects familial generations for centuries and still remain the main food supply. Being outside in nature, taking from the land not only provides space and freedom but also a sense of a spiritual healing. The commonest way to cook wild greens is to boil them in salted water and serve with a drizzle of olive oil and lemon juice.

The thermal wind increases steadily from midday until late afternoon. Later, the wind changes and the sea becomes rough, making it better for experienced wind surfers wanting to try new tricks.
